Mini Cosmic Crisp® Apple Tarts

Ingredients

3 Cosmic Crisp® apples, cored and halved

2 refrigerated pre-rolled pie crusts

¼ cup brown sugar

1.5 tablespoons of all-purpose flour

2 teaspoons of ground cinnamon

1 teaspoon fresh lemon juice

Pinch of salt

2 tablespoons of unsalted butter

¼ cup apricot jam

Directions

*This recipe uses 3” tart pans.

To make the Mini Cosmic Crisp® Apple Tarts:

  1. Preheat the oven to 220°C.
  2. Roll out the dough on a lightly floured surface until it’s about 6 mm thick. Flatten any creases.
  3. Place tart pans on the surface and cut 6 circles large enough to extend 6 mm past the rim of each pan.
  4. Press the dough circles into the pans, trimming any excess. Pierce the bottom of the dough with a fork 4 or 5 times, then transfer to the freezer for 15-20 minutes.
  5. While the dough chills, thinly slice each apple half, keeping the slices together so one half can fit neatly in each pan.
  6. In a small bowl, whisk together the sugar, flour, cinnamon, and salt.
  7. Remove the tart shells from the freezer. Place a half apple in each shell, sprinkle with one-sixth of the sugar mixture, and dot with about 1-½ teaspoons of butter.
  8. Bake until the shells are golden and the apples are tender, about 28-36 minutes.
  9. Gently heat the apricot jam and lightly brush onto the hot apples. Cool the tarts on a wire rack for at least 10 minutes before serving.
  10. Serve with cinnamon-flavoured whipped cream or ice cream.
