Cosmic Crisp® Apple and Rhubarb Crumble

Ingredients

  • 2 Cosmic Crisp® apples, diced
  • 4 stalks rhubarb, diced
  • ¼ cup brown sugar
  • 2 tbsp all-purpose flour
  • ½ lemon, juiced
  • Vanilla ice cream, to serve

Crumble Topping

  • 1 cup all-purpose flour
  • 1 cup brown sugar or coconut sugar
  • ½ cup butter, melted
  • ½ cup oats
  • Pinch of salt

Directions

  1. Preheat the oven to 190°C.
  2. In a large bowl, combine the rhubarb, Cosmic Crisp® apples, brown sugar, flour, and lemon juice. Toss well to mix.
  3. In a medium bowl, mix together all the ingredients for the crumble topping until well combined and crumbly.
  4. Spread the apple and rhubarb mixture evenly in the bottom of an 20×20 cm baking dish. Evenly sprinkle the crumble topping over the fruit.
  5. Bake in the preheated oven for 25-35 minutes, or until the mixture is bubbly and the apples are just tender.
  6. Allow to cool for 10 minutes before serving. Serve warm with vanilla ice cream if desired.
