Winter Harvest Salad with Cosmic Crisp® Apples

Ingredients

For the salad

  • 1 bunch kale, chopped
  • 1 cup cooked quinoa
  • 1 cup diced butternut pumpkin, roasted
  • 1 Cosmic Crisp® apple, julienned
  • ¼ cup toasted pumpkin seeds
  • 1/4 cup sultanas or dried cranberries
  • 1/4 cup crumbled feta

For the Maple Dijon Vinaigrette

  • ¼ cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 2 tsp dijon mustard
  • 1 large clove garlic, crushed
  • 1/2 tsp dried rosemary
  • Pinch salt and pepper, to taste

Directions

To make the Winter Harvest Salad with Cosmic Crisp® Apples:

  1. Make the vinaigrette: Add all ingredients for the maple Dijon vinaigrette to a medium bowl or jar. Whisk or shake with the lid on until smooth and emulsified, about 15 seconds.
  2. Massage the kale: With a very small drop of olive oil, gently massage the kale to make it tender.
  3. Assemble the salad: Divide the kale and quinoa between two bowls. Top each bowl with the roasted pumpkin, julienned Cosmic Crisp® apple, pumpkin seeds, dried cranberries, and feta.
  4. Serve: Drizzle with the desired amount of dressing and enjoy!
